- Parsley (optional)
Directions
Prep Seasoning
1. Mix together the seasoning including thyme, chicken broth, mustard powder, bouillon, onion powder, and soy sauce.
2. Set the mixture aside. Measure and combine Parmesan cheese with flour on a prep plate.
Prep Chicken
1. Slice the chicken breasts into 2-3 thinner slices, then place the pieces of chicken in a gallon freezer bag or wrap them with saran wrap.
2. Use the textured side of a meat mallet and pound the pieces until the chicken is a ½ inch thick then pat the chicken completely dry with some paper towels.
3. Remove the freezer bag or saran wrap from the chicken then season with Italian seasoning, salt, and pepper. Then coat the sides of each piece of chicken with the flour mixture.
Cooking Chicken And Making The Sauce
1. Heat a large skillet over medium-high heat and line with olive oil to start searing the chicken for 4-5 minutes per side or until a golden crust develops.
2. Set the chicken aside and use a silicone spatula to loosen up the brown parts from searing then add garlic cloves, letting them soften for 6-7 minutes to caramelize.
3. Add flour whisking with a fork for 1-2 minutes and the sauce starts to brown.
4. While stirring continuously, gradually add the chicken broth.
5. Reduce the stovetop heat from high to low, bringing the sauce to a boil then stir in heavy cream and optional Parmesan cheese.
6. Once the sauce has been evenly combined, add the chicken to the sauce and spoon the sauce on top of the chicken.
7. Cover the skillet and cook for an additional 5 minutes, this will help the sauce thicken.
8. Garnish with parsley, serve and enjoy.
